Sturgeon-Vegetable Salad

Ingredients:

¾ lb sturgeon
1 lb boiled potatoes
¼ lb cucumber
¼ lb apples
¼ lb tomatoes (cherry tomatoes, possible)
½ lb Mayonnaise
1 hard-boiled egg
Green salad, salt, and sugar on taste

Method:

Boil sturgeon in salt water with ½ tsp lemon juice.
Then drain, cool, and cut into small slices.
Peel potatoes, and cut into medium cubes.
Cut the apples, cucumbers, and tomatoes in same-size pieces.

Rainbow trout under walnut sauce

Ingredients:

2 lb rainbow trout fillets cut into 4 pieces, or 4 rainbow trout.
¼ lb peeled walnuts
3 garlic cloves
Salt and parsley greens on taste

Method:

Peel and wash the fish.
Bring 2 cups water to boil with greens and spices on taste, put the fish in the boiling water, set to low heating, and boil for 7-13 minutes.
Drain the fish and put on serving plates.

Rollmops

Ingredients:

1 herring
1 large shallot onion

For brine:
4 cups water
1 tsp salt
2 tsp sugar
1 tbsp 30% vinegar

Method:

Take 2 herring fillets, and remove all bones and skins.
Cut every fillet into 2-4 stripes, and cut the every stripe into shorter 2 halves.
Peel and slice onions.
Put an onion slice on the edge of a fillet stripe, roll it tightly, and then clip it with a toothpick.

Smoked fish – Potato Salad

Ingredients:

1 lb smoked fish (cold smoked preferably)
0.5 lb boiled potatoes
2 hard-boiled eggs
2 tbsp horseradish (optional)
0.5 lb mayonnaise (or sour cream sauce, or sour cream-mayo mix)
Dill and parsley greens on taste

Method:

Cut skinless and boneless smoked fish fillets into small pieces.
Grate eggs, and, optionally, horseradish.
Peel and cut potatoes into medium cubes.
Mix all ingredients, put in a salad bowl, and decorate with the greens.

Potato-topped Steelhead

Ingredients for 4:

1.5 lb steelhead fillet, de-boned and de-skinned
2 potatoes
1 large shallot onion
1 garlic clove
4 tbsp sour cream
1 – 2 cup grated cheese
4 tsp lemon juice
Salt and pepper on taste

Method:

Cut fillets into 4 pieces, tenderize every piece, and sprinkle with lemon juice.
Peel and grate potatoes and onions, drain, then pour 2 cups boiling water over the potato-onion mix, and let sit for 5 minutes.
Drain, and mix with salt and pepper.

Herring Salad

Ingredients:

4 medium boiled potatoes
2 medium boiled beets
2 large herring fillets (de-boned, skinless)
1 medium shallot onion
3 tbsp grated cheese
3 hard-boiled eggs
Mayonnaise and vegetable oil on taste

Method:

Peel potatoes, cut into medium cubes.
Place a layer of potato cubes on a serving dish, sprinkle with vegetable oil.
Slice 1 herring fillet into small cuts,
Put them over the potato layer.

Crab Salad with Caviar

Ingredients:

0.75 lb crabmeat, or crabmeat imitation
1 large green apple (Granny Smith preferably)
1 sweet red pepper
Caviar – 1 can (1/8 lb)
"1000 islands" dressing on taste

Method:

Peel and grate the apple, and the pepper.
Cut crabmeat, or imitation, into very small cuts.
Mix crabmeat, apple, pepper, caviar, and sauce on taste.
Decorate with seafood.
You can serve this dish as a salad, in a salad bowl, or as an appetizer, in tartlets, or Panna Cotta.

Fast Fish Salad

Ingredients for 2:

1 cup boiled rice
1 can fish in own juice (or 0.5 lb boiled fish without bones and skin)
0.5 bunch green onions
4 hard-boiled eggs
2 tbsp grated cheese
2 medium picles
2 tbsp mayonnaise

Method:

Grate eggs, cucumbers, cut green onions and fish.
Mix all ingredients and mayo, and mix well.

Salt Steelhead

Ingredients:

1.5 lb fish (steelhead, rainbow trout, chum salmon, salmon, etc.)
2 tsp large milling salt (coarse sea salt)
1 tbsp sugar or honey

Method:

Defrost in a refrigerator if necessary.
Make a cut on the spine. Remove bones.
Mix salt and sugar. Sprinkle fish meat with this mix evenly. Then stack fillets (skin outside), full in the salt. Any salt that does not stick to the fish, put on a clean fabric piece in an even layer. Put fish over it, and roll tightly with the fabric.

Herring in sour cream

Ingredients:

1 large salted herring
Small shallot onion
1 medium apple
0.4 lb sour cream
1-2 tbsp lemon juice
Salt and sugar on taste
Dill greens for decoration

Method:

Soak the herring in water for 12 hours, drain, and soak the herring in milk for 12 hours.
Clean, remove all bones, and cut into medium pieces.
Cut onions into medium slices; grate peeled the apple, then mix the apple, onions, and sour cream.
